‘Sing me a song of a lass that is gone’, the beautiful opening lyrics of The Skye Boat Song. A Scottish folk song, well known now thanks to it’s use as the theme tune for Outlander. If you haven’t been caught up in the incredible story yet, there’s time to catch up. It’s a tale that brings together romance, adventure, history and science fiction – and it is a magical combination.
The epic love story begins with Claire Randall, a married combat nurse from 1945 being mysteriously swept back into 1743. She’s forced to marry the handsome, brave and romantic Highland warrior, James Alexander Malcolm Mackenzie Fraser – Jamie to his friends. They fall in love in the midst of the Jacobite Rebellion and the dangers that come with those times. The sweeping Scottish scenery is another reason to watch too.

Now, Outlander took an extended break after it’s last series, leading to a difficult period of time known as droughtlander. It was a dark time for many of us, missing Jamie from our lives…OK, Claire too we suppose! So here at the Dunstane Houses we figured we’d need something in case a tragedy like drought-lander ever struck Edinburgh again. Then we found Andy. One of Jamie Fraser’s kin who, with his unique insider knowledge of the TV show, it’s filming locations and the history of the Highlanders, is perfect to fill the Outlander shaped hole in your heart.

BRING THE FESTIVITIES TO LIGHT
Watch the festivities get underway on the 30th of December in the annual Hogmanay Torchlight Procession. Join over 30 000 torch-wielding Hogmanayers shed some light on the Hogmanay festivities as they snake their way through Edinburgh’s city centre. Lighting the way from George IV Bridge to Calton Hill in a blazing river of fire, the procession ends with a spectacular fireworks display over the city.

1.Mercat Tours
“Feeble candlelight. Ghoulish costumes. Unsettling stories” are all promised by Mercat Tours on their All Hallow’s Eve tours. If you have stayed at The Dunstane post-refurb, you’ll have already experienced the heavenly scent of the Noble Isle products in our rooms. We don’t mind admitting we’re slightly in love with their range, so thought we’d find out more about the brand from founder and director, Katy Simpson.

Katy told us how she started the business with 3 former colleagues back in 2011, they all had the passion to create a truly British brand, “During the creation of the brand, we travelled the length and breadth of England, Ireland, Scotland and Wales to source authentic, quintessentially British ingredients that celebrate our rich cultural history” We love having a product at the Dunstane Houses which promotes the local area, are all your products designed to do this?

We promote farmers, charities, conservationists – people doing exceptional things in our country. Each producer is incredibly passionate about their ingredient. So the most important factor when making our products is that we use British extracts from local celebrated producers from the British Isles. Perry Pear from Gloucestershire Orchards, Barley from the Balvenie distillery, Beetroot from Monmouthshire, Elderflower from Cornwall, Samphire from the Irish coastline and Willow Song from Suffolk – to name just a few!

Can you take us through the process of creating a new scent?
The first thing I do is research an interesting story – something happening in the British Isles. I visit the producers, find out more about them and their story, take photos and samples and then I am ready to brief into my fragrance house. I send my “nose” (fragrance creator) a brief about the story, including evocative imagery of the raw ingredient and landscapes. Like an artist using oil and canvas, a master nose, paints you a picture with aromas. It is well known that smell is our most powerful sense and a fragrance is more emotive than a picture. The most exciting part is when the fragrances are presented – closing your eyes and letting the aromas create a story in your mind.

Where did the inspiration for ‘Heather Honey’ come from?
At the beginning of my journey with Noble Isle I visited Gleneagles for the weekend. It was my first-time visiting Scotland in the summer months and as I drove down the picturesque, rugged country lanes, I was astounded at the beauty of mother nature in this part of Scotland. Purple mountains were the backdrop to this miraculous part of Britain and it wasn’t until some later research that I understood it was the heather making these mountains purple.

Heather is the only nectar surviving plant at these high altitudes, and this hardy little alpine shrub provides the alluring colour palate of Perthshire. Heather Hills Honey take millions of bees up to the mountains each summertime and the delicate blossoms of the heather give the honey a naturally distinct taste. You can try it for yourself, it’s served at breakfast in the Ba’ Bar at the Dunstane Houses.

Being British and promoting the provenance behind the extracts is incredibly important to Noble Isle. It is the heart and soul of our brand and our customer enjoys edinburgh the stories of the local producers who are doing incredible things within the British Isles. This story was just so beautiful, I knew it had to become part of our collection and I hope you all agree!

Can you tell us more about the fragrance behind Heather Honey?
Heather Honey is wild and distinct and a prized Scottish delicacy. Our fragrance contains a bright composition of white blooms – jasmine, magnolia and neroli – with a squeeze of grapefruit and extract of protein-rich heather honey harvested in the Perthshire Highlands. Heather Honey is rich with antioxidants and proteins, enveloping the skin with restorative properties combined with a rich scent.

So if you needed any more reason to climb into one of our luxurious copper tubs, you have it now…

The Ba’ Bar is a warm and relaxing area to enjoy a bite to eat throughout the day. With indulgent dishes alongside healthier choices to suit any taste and mood. An extensive breakfast menu includes fruit and Greek yogurt sundaes drizzled with Heather Hills Farm honey, alongside a full Scottish breakfast, pancakes and eggs Florentine. Perfect for breakfast or brunch, depending how much you enjoyed our extensive rare whisky selection the night before.

A choice of wee bites and larger dishes are perfect for lunch and dinner. From smaller plates of Orkney Kirkjuvagr gin and orange smoked salmon and crispy Campbell’s haggis bonbons to bigger meals of Scrabster haddock goujons and The Dunstane burger, we have something to suit every appetite. With all our dishes made in-house, with the freshest ingredients, our Chefs are always happy to tailor a dish to your particular tastes.

Complement your meal, big or small, with a bottle from our hand-selected wine list or an expertly crafted cocktail from Dan behind the bar. Indulge in a wee night cap before bed, a dram of whisky or a glass of wine, served with our Scottish cheeseboard or artisan bread and olive selection, if you still have room. Our all-day dining menu is served until 9:30pm daily.

Special occasion, weekend treat or just a day ending in “-y”, our Afternoon Tea is served daily from 2pm. With just 24 hours’ notice you could be indulging in a mid-week treat, served with a selection of TLC speciality teas or a glass of Joseph Perrier Champagne. When the sunshine makes an appearance, take your tea out onto our terrace and make the most of those rare Scottish rays.

Whilst booking is not generally required, we do highly recommend it; the exception being afternoon tea, which as mentioned, does require booking a minimum of 24 hours in advance so we can freshly bake those scones for you and make sure you have a table, so all you need to worry about is which goes on first, jam or clotted cream!
